The Wine
The slight copper hue gives a hint of the Blanc de Noir style - a white wine made from red grapes. The nose of rose water and honeysuckle leads to a rich palate showing flavours of apricot and quince with an almond/marzipan finish. The palate is super textural and complex. A great late-night wine. 12.0% alc/vol.

Cellaring
Enjoy at release or drink/cellar until 2030.

Winemaking
Made by Candice and Frewin at the CRFT winery in Carey Gully. Hand-picked, whole-bunch pressed, and fermented in oak on full solids. Full wild MLF and maturation on full-ferment lees, with occasional lees stirring. 8 months in 100% French oak, all older, seasoned barriques. Vegan-friendly.

Gently pressed for minimal colour extraction. A slight copper hue remains from the Pinot Noir grapes; no fining was used to reduce colour.

The Vineyard
The Manyara vineyard is a collection of rolling vales, based just outside Balhannah and situated a stone’s throw from the banks of the Onkaparinga River.

Organically farmed since 2019, fully certified from 2021.
